INGREDIENTS:
1 small Broccoli chopped with stems and all
10 button mushrooms sliced
1 small onion
Few garlic cloves
Mild cheddar cheese
Processed cheese
Chicken stock
Salt n pepper to taste
Rosemary
Heavy cream 1/2 cup
METHOD:
Sauté chopped onions and garlic, once it gets translucent, add in your mushrooms. Cook it for a couple of minutes before adding the broccoli.
Add salt and pepper
Sweat out the broccoli for some
Add chicken/veggie/mushroom stock (I used some frozen chicken stock)
Wait for it to come to a boil and make sure the broccoli has gotten soft
Add the rosemary sprig or dried rosemary seasoning
Drop in your cheese.
Blend it all
A bit of heavy cream and garnish with a bit of olive oil and heavy cream drizzle
Serve hot with toasted bread
