Melt butter in a baking pan and bake the potatoes seasoned with salt and pepper (you can add garlic powder too) for 40 mins at 230C. I used tiny potatoes and left the skin on.
Chop your broccoli and spring onion
Season chicken breast with salt, black pepper, and chili flakes
Heat olive oil in a pan, and sear the chicken breast for 6-7 minutes on each side. You can pan-fry the broccoli after adding a dollop of butter in the same pan while cooking your chicken steak. This helps prevent the chicken breast from drying out. After cooking the steak, allow it to rest for a bit before slicing it as the chicken continues to cook.
For the scallion and chili-garlic oil- add some more olive oil to the caramelized pan, drop the chopped spring onion and a bit of garlic, and chili paste, and cook it for a minute.
Serve it over the steak with your roasted potatoes and veggies.
